How the numbers work
Stations: one trash bin and one recycling bin for every 50 guests indoors, every 40 outdoors. Bags: from about one per 12 guests for a plated dinner with no bar, up to one per 7 for a buffet with a full bar, plus 5% for every hour past four and 15% more outdoors.
